The Long Island Pine Barrens Society has embarked on an initiative titled “The Best of the Rest,” an effort to protect 3,800 acres of Pine Barrens, an addition to one of the great environmental achievements for this area. We have a steady turnover of restaurants in the East End, because restaurateuring is hard. There’s no margin in food. Rents are high. It’s difficult to get experienced staff. But you know all this. In addition to potatoes, carrots grow well in Sagaponack. Our soil type can sustain their thirsty character while letting that long, singular, sweet tap root seek itself deep and straight into the dirt.
