Nadia Ernestus will ask audiences to think about gut health, the human microbiome, fermented foods and the practical, delicious ways to nourish yourself naturally during Wellness Monday at the Church on Monday, August 11, at 3 p.m.

Demonstrating how to ferment vegetables step-by-step and preparing a simple dish using fermented vegetables, the respected health coach will show us how easy it is to reap and enjoy this health benefit, offering participants a taste of a few ferments.

With a careful focus on traditional fermentation, participants will be invited to think about the connection between food and health and the powerful ways it can support our immune system and digestion. Nadia will cover the basics of how and why fermentation, a part of every traditional diet for thousands of years, works, and share the science behind its benefits. While participants will not be making their own fermented foods, they will enjoy a “taste buds-on” experience of the foods Ernestus creates.

Ernestus is a widely respected health coach, fermentation expert and founder of Hamptons Brine. Born in Russia, she moved to the United States in the early 1980s and has been a full-time resident of The Hamptons for the past 35 years. Her engaging, science-informed workshops connect traditional food practices with modern health, grounded in both personal transformation and professional training. A graduate of the Institute for Integrative Nutrition and a member of the American Association of Drugless Practitioners, Ernestus reversed her own Type 2 diabetes through diet and lifestyle and has since dedicated herself to helping others do the same.

After successful careers on Wall Street and in real estate, Ernestus shifted her focus to nutrition and wellness, combining her expertise with deep knowledge of the human microbiome, food science, and fermentation. Her workshops, ranging from kraut-making to kombucha and raw foods, are both educational and hands-on, offering practical tools for sustainable health.
